Romain des Grottes, a vigneron known for his natural wines, herb farming, and concert-level piano improvisation, never intended to chase trends. Yet, his greatest success isn’t his beloved Beaujolais but L’Antidote, an unfermented non-alcoholic wine he conceived in 2010. Blending apple and gamay juice with herbs and flowers from his untamed vineyards, he balances acidity, sweetness, and bitterness before adding bubbles and pasteurizing the bottled product to preserve its subtle aromas. Originally created as a drink to share with his children and maintain clarity, L’Antidote has become a favorite in Europe’s natural wine scene, with demand skyrocketing from 10,000 bottles in 2020 to 87,000 in 2024. Praised for its vintage variations and ideology-aligned natural approach, it’s embraced in cities like Paris, Copenhagen, and London, where it’s served in wine bars and traditional restaurants alike. Although currently unavailable in the U.S., whispers of its return circulate, while Romain remains both amused and astounded by its meteoric rise.
